Chocolate Zucchini Cupcake Recipe

1/4 cup butter
1/2 cup vegetable oil
1 3/4 cups sugar
2 eggs
1 tsp vanilla
1/2 cup buttermilk (or sour milk)
2 1/2 cups flour
4 heaping tbsp cocoa
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp cloves
2 cups grated zucchini
1/4 cup chocolate chips
  1. Preheat oven to 325 F.
  2. Cream butter, then add oil, sugar, eggs, vanilla and buttermilk.
  3. Sift dry ingredients and add to creamed mixture. 
  4. Mix in zucchini and chocolate chips.
  5. Bake as cupcakes (24) or in 9x13" greased pan at 325 F.  Cook for about 30 minutes for cupcakes, or 45 min. for slab cake.  Cakes are done when they spring back to touch or toothpick inserted in centre comes out clean.
